Maple Help

This last spring my two Japanese maples had a series of unfortuante events. Now seeing as the previous owners planted both of these I don't know which is which but the maples are Aratama(Acer palmatum 'aratama') and Dancing Girl (Acer Palmatum 'Beni maiko').

Event 1: A section of fence broke in a wind storm and one of the maples' trunk was broken down to roughly two inches from the ground. No damage to the other tree that was but four feet away.

Event 2: One month later with some help from our basset hound the other tree was stripped of all the limbs and the tree was essentially topped off at roughly 1'. She likes sticks, apperently either alive or dead.

Both of these trees, to begin with, were roughly 18" tall. But after the damage and the time that the damage happened, early spring, I figured both the trees were killed. To my pleasent surprise both of the trees still had enough energy to put on new branches.

So now I need some help. Considering the situation what should I do?

Pruning:

Do I prune and shape the trees? Or do I let them just grow for a few years, letting them recover from this last year? Also, when is the ideal time for pruning mapels and what are some things that need to be consider?

I'd appreicate whatever help you could provide me.
