Olive or other dark green countertops will kill the red. If you'd prefer a lighter color, try ash grey. Just make sure that whatever countertop material you get doesn't have reddish undertones itself. It sounds like the countertops you have now also have reddish undertones, which will just highlight what's going on with the maple.

It would help to know what other colors are in the room or adjoining rooms. I seem to be in the minority here on houzz in that I like dark countertops with mid to dark tone cabinetry. Most people want to see a lot of contrast. What we have done is use a labrador green or labrador gold or an uba tuba that have brown in them so that it pulls the brown tone and not the red. These also happen to be pretty cost effective granite selections.
