I've got an incarnata that's starting to drop fruit. They've been on the vine for roughly two months, so the timing is about right for them to drop. The trouble is, they're still bright green. I always thought incarnata/maypops turned a dull yellow when they were fully ripened?

The dogs got ahold of one and ripped it apart. Most of the seeds inside were dark and mature, although there were a few pale, immature seeds. The insides *looked* ripe, but I didn't actually give it a taste test, because dog slobber is not that appealing to me.

Do I need to let them sit out for a while to fully ripen, or is this as good as they get? Can anyone clue me in?
