Note that the branches grow laterally from the segments. It will grow new branches from the segment below the pruning cut and grow tall again.

I have grown a number of Mango trees, but have not yet had to face this problem. Where are you from? (zone?) Mango trees don't do too well in harsh winters. Like Terry has said, if you remove the apical meristem, the plant will not grow up from that point anymore, however, it will begin to branch, and those branches will continue to grow vertically as they grow out from the segments. I know this is a really late response, but I am very interested in how this worked out for you! If you did not find a better way, let us know how it goes....
