Different peppers will last longer or shorter than others. Also depends on your climate and how ripe the peppers were when you picked them.

I usually pick peppers when they first start turning color to final ripe color. I sit em on a countertop for a day or two and they usually turn completely ripe. After those first couple days ripening i sometimes refrigerate em if i plan on using them in the next few days, but after 4 or 5 days in the fridge they will start to soften up and lose that fresh crispness.

So if ya plan on using your peppers fresh i would say ya gotta use em up in that first week after picking or seek some longer term preservation methods, like freezing, drying, canning, pickling, etc.
