Seed Saving Question

I am saving seeds from various varieties of peppers. I have noticed that some of the seeds turn brown within a very short period of time after removal from the fruit. I suspect the browning is similar to the turning of sugar in an apple upon exposure to air, but am not sure. Is the sugar/apple analogy correct or are the seeds damaged/infertile? Thank you for your help.
