Help with Peppers

We have a major surplus of hot peppers (Lowe's mislabeled the plants as sweets!), and I can't say we're that into having so much heat around. I thought about making jalepeno-mint jelly, but the recipes I'm finding call for all of 2 peppers. That's not going to help me with getting rid of them all!

Any suggestions for large-scale preservation of jalepenos?

I put them in a freezer bag whole, then into the freezer and chop them up as needed for salsa throughout the winter.

We have tons of pickled everything already, but thanks for the idea.

Freeze them whole...they don't end up infusing everything in the freezer with heat? They warm my nose when I walk in the kitchen. Otherwise, great idea...we love making salsa.

I've never had an odor problem in the freezer with peppers. Chopped onions on the other hand...

kodoz, why not dry them using a food dehydrator.
