Don't mess with the older cuttings. Leave them alone! They will do what they are going to do. Removing them from the soil to check for callus will inhibit callusing and rooting. Use your hormone on any new ones and just let these take their time to do their thing unless you don't care about possibly losing them. If they're a few weeks old and look good, that's a great sign!
