Pepper Mash? AGAIN

First off I have made some sauces from a few different pepper mashes and that makes all the difference in the world compared to my old way of just making the sauce from fresh peppers. Sauce have WAY better taste. And I did different mashes: 1) put whole peppers in jar with salt and let them mash 2) cut up peppers added salt 3) pureed peppers added salt and yeast and fermented them. Out of the 3 ways I like the cut up peppers with salt the best, but all 3 turned out well. Let them sit for maybe 2 months and still have some going, guessing the longer the better. Chinese peppers make GREAT mash as do frutesens, annuums not so good to me, will not mash any more annuums.

Question? my sauces taste get but would like for them to be a little thicker, is there anything I can add to thicken them up?
