Seeds should be harvested as soon as the hips have definite color on them and before they are hit by a hard frost. Hybrid Tea seeds will not tolerate being frozen hard if you wish to germinate them.

I too wanted to try to grow some from seeds this year, but my minis didn't produce any hips. The only hips I have are a few John Davis and Champlain, maybe Morden Ruby.

If you or anyone else in Canada have any seed to spare, I'd love to try some.

The seeds inside are generally always white or beige, regardless of the ripeness of the hip. So if the hip has turned color the seeds are ready.

Darn, wish I had read this post 2 days ago when we got our first hard frost. I will go out and collect a couple hips today anyway. I only have New Dawn Climbing rose hips. I read somewhere that the seeds won't absolutely produce climbing roses, too bad, thats what I'm looking for.

It depends how hard a frost it was. If it just went down to 25F or so, you probably still have live seeds. If it went much below that, chances are they have been damaged, but go ahead and collect them and try anyway.
