To collect Hellebore seeds you need to watch the developing seedpod very carefully. They do tend to burst open when you're least expecting them to. I collect my seeds just as the pod splits open and seeds have begun to turn black.

I used a tip from the hellebore forum. I took nylon knee highs and placed them over the flower head. When they opened the seeda dumped into it.
It worked like a chrm.
