The seeds are small tails (don't know the exact seed terminology) at the base of each little floret in the flowering bract. When picking the stalks, bunch them together and hang upside down letting them dry out completely. You can roll the dried clusters between your fingers to separate them.

I can't think of any plant that attracts more butterflies than statice.
