What do you mean by drying process? Are you just letting them dry spread out on paper towels or paper plates? If so a little bit of discoloration around the edges is no big deal. It takes at least a week of drying to be finished. I then put them in a paper envelope, not plastic, in case there is any moisture left. If you put in plastic and the seeds are not dry enough, they will die and not germinate. After you've stored them for awhile, you can transfer to a plastic bag or film container if it is more convenient.
If you are trying to speed up the process with heat, that is no good. You will kill the seeds.
Also, the peppers should be fully ripe when saving seeds. Green peppers are edible but not totally ripe and will have immature seed. They need to turn their final color, red, yellow, etc.

thank you very much that answers my question and yes i am using the paper towels to dry them on top of the fridgs as my cats get in to every thing else lol i thought about using a dehydrator but decided against that metnod as i make beef jerky in that and couldn't figure out how it wouldn't cook the seeds
