How dry is dry enough?

Can I cut half-dried branches from plants and save them in paper bags until the seed pods are dry? I'm thinking of plants like arugula, clarkia, catchfly. When the seeds are mature sized but the pods and plants aren't yet dried brown, will they mature if I pulled them out? I'd like to replant the area they're in.

Leave the pods, heads, etc., until they are brown and dry...It's not the branches or plant you are looking to be dry ..its the parts containing the seed :)
Many plants are nice and green until nipped back by frost or are evergreen and still have mature/dry seed parts ready to harvest.
