I too grew Moulan Rouge. They are quite striking. Mine looked almost chocolate brown rather than red. Last year I had smaller type sunflowers that I cut off the bloom and hung it upside down in my garage. They germinated fine this year.

And moonflowers! I have been trying to grow these things for 3 years...finally this year they were lush and loaded with blooms. I dont think its necessary to cover the pod with cheesecloth. As an experiment I cut one off, put it in a cool dry place, and it did get brown and crinkly just like morning glories. I got 4 seeds out of that pod. I'm going to leave some on the vine to dry out.

For cannas, wait until the "green spongy" pod turns brown and papery. If it has a seed inside, you will know. They are brown to black, round, about the size of a large pea, and hard as a rock! I have heard that seeds from hybrid cannas don't usually come true, but I have saved seeds from my 'Pink Beauty' just to be sure =) I only have two so far, though =oP
