Help saving a few types of seeds :)

i have a few things i am trying to save this year:

FIRST: Moulin Rouge sunflower, i planted these late, and they are only about 3 feet tall, but got some nice blooms, i covered two of them with cheese cloth, 2 weeks ago, ( am saving some for the birdies!) ..now they are facing "east" and dropping, but not dying....any help as to when to cut the heads off "chuckle"!!

SECOND: Canna, unknown type...pretty coral blooms about 4 feet tall....I covered some of these also with cheesecloth after the blooms were dying back...about one week ago....the seeds look "green & spongey" some are staring to darken now...how long do i wait??

THIRD: Moonflowers....This was my first year growing them, and they did beautifully!!!! finally have seed pods, and have also covered a few with cheesecloth...they are tanish green, and some are alomost as big as a peach pit...i opened one yesterday, seeds are white and soft.....do i wait till the pods turn brown and "crisp" like morning glories??
