Hi ProudGM,
There are two kind of petals that you may encounter in a Gomphrena(Globe Amaranth) trade. Thin papery flower petals some may have pink color on them, those are chaff. Mixed in with those, hopefully you see somewhat fuzzy teardrop shaped objects that at the base are hard. Those are the seeds. The link below shows them, they just don't have the fuzz look in the photo that I see in person so maybe some varieties are less fuzzy.
