Thank you. I feel silly asking that question, but it highlighted for me how disconnected most people (myself obviously included) really are from their food, and I was unable to find the answer via google.

I checked the faq on spacing after I posted. D'oh! I'll look first next time.

I grew these for the first time about 4 seasons ago and turned out to be very easy to grow and very tasty. Don't forget to prepare the green/red top just as you would any other green. I found that I prefered the tops over the beet roots. I am growing extra this year just for harvesting the tops.

One beet plant does produce one beet root. But, to add complexity, one beet seed may grow many beet plants. Beet 'seeds' are actually seed clusters, with between 1 and 6 viable plants inside. You'll have to pick the hardiest and thin out his neighbors.

Oh! I didn't realize beet seeds were clusters. Thanks for cluing me in to that. My seeds are in the ground right now -- I'll be on the look out for clustered seedlings.

What's not right? That beets have clustered seeds? I'm afraid they do, planted in a square foot garden, plain old dirt, or a hydroponic system.

It isn't any more or less simple - it's just the way the plant is designed. :)

you put 9 seed in a square and you get 9 beets...pure and simple...there is no complexity to it at all...

I had no idea they were clustered seeds.... Now that makes sense... I put 9 to a square and I just realized there were 3-5 plants in some locations and I was frustrated at wasting seeds... Now I know it was not me... But the seeds god made that we're doing just what they were supposed to do.... I was so careful to get one per hole... That is kinda funny...
