Juniperus virginiana (what many people in this part of the country call cedar trees, but actually not a true cedar at all) do vary a great deal in color from tree to tree. They are the same type; they just differ in individual coloration and may also vary from year to year. This may be due to different levels of the chemicals that change color in response to light level and temperature. I think you will also see color differences, although maybe not as pronounced, even in the middle of summer.

You can also find variation like this in other conifer species. For example a single batch of seedlings of Blue Spruce can have individuals that vary from very green, with no really noticeable blue, to quite blue. The blue Blue Spruces you see at nurseries were individually selected for color or are grafted cultivars.

really? I know most of the big trees in my feild are green but all of the baby's, like up to a foot tall are red or rust colored at the moment..

We have some evergreens (not cedars) that have some rust colored branches. I'm chalking it up to stress from last year's drought.

Mopower440, I know exactly what you're talking about. Mine are the same way. There is quite a bit of variation in the coloring of the bigger ones, but the babies definitely tend to be more bronzy or rust colored. That's just the way "cedar trees" are.
