They will process them it just takes longer. Potatoes and their peelings tend to stay fairly crisp for quite awhile, unless the potatoes are cooked. Nuking them before you put them in the bin will help them to be processed a little faster. When I put potatoes or peelings in the bin, I always make sure I put softer food in at the same time, so they'll have something to eat fairly soon, and also for a later time (the potatoes).

potatos have solanine, as do tomatoes, and it takes a while for that to break down via microbial action to a point where worms can attack the scraps ... same as limonene in citrus

not really a problem in the worm bin or composting, but as Deanna said, just takes longer - and note that potatoes that have been sun-exposed and started getting green have more, so will take longer yet

So that's it - I know that citrus takes awhile too - I usually mash them up - which seems to help.
