Questions about different food sources?

Hi, great forum here. I'm am just getting into this whole vermiculture thing. I've read a lot of information the last few weeks and just have a few questions about food.

One book that I read said that moldy cheese could be used, but everything else I've read said dairy is bad. If I let cheese mold thoroughly, would that be good to feed the worms?

I've also read that hair can be used in regular composting, but is it good for worms?
