shade cloth

ive recently moved down to the high desert,el.3,500 from the high country el.7,500. am trying to get a decent crop of maters.it gets around 105ish during the dog days.have been told by some locals that you need to cut your plants off from the afternoon sun.my neigbor is doing this with seemingly good results.however ive only got a few places on the property where this can be done without major movements regarding water supply, habitat in terms of soil, etc.i enherited a worked space that i would like to be able to stick my plants-it gets a lot of sun-ive put a few in the ground in other spots where the afternoon sun gets cut off after about 5 hours of morning-early afternoon sun,but am hoping to utilize this other plot for other plants as well.im using straw as mulch for water retention.my question- is there anybody out there with experience with shade cloth-should i go with 50%,60%,or more? or none? i know water, water, water.but even then trying to balance-i will go no further. you out there who have been in the same situation probably know where im going.

any advice would be greatly apprieciated
