Preserving Tomatoes

I've been researching preserving tomatoes and I just wanted to ask a few questions. I've seen some good instructions on preserving whole tomatoes, but I was wondering how they taste after? Can they still be cut and used for things like sandwiches, or are they just mushy and ready for a sauce of some sort?

I'd also like to know people's favorite method of preserving tomatoes. Any suggestions?

You're not going to slice a canned tomato.

Get a copy of the "Ball Blue Book" everything you need to know.

The tomatoes I don't eat fresh are either turned into homemade tomato juice, bloody mary mix or dried in my Nesco dehydrator for delicious snacking...

I've never tried making pasta sauce though I might this year...

The Harvest forum here (linked at the top of this forum's front page and below) has all the info on canning and preserving as well as up to date rules and regs, recipes, how-to's, details on what must be pressure canned vs. BWB, how to dry, etc. It is where all we home canners hang out. ;)

The Ball Blue Book, as mentioned, is the place to start as well as National Center for Home Food Preservation online at http://www.uga.edu/nchfp/. The Ball Blue Book is sold where ever they sell canning supplies.
