Will the seeds not breakdown in the bin? I guess not!

Most of the seeds break down eventually. The shells sometimes don't, especially mature squash seeds.

I think mine sprount in the bin and get eaten.
The harvested vermicompost maturing bucket I let get real wet before it drys.

OI have 7 new tomato plants that I have staked just to see what they will do. and a muskmelon that has loads of little fuzzy melons growing on it and a watermelon has sprung up too. so it's a wait and see.

They should not get eaten while they are alive, not by worms anyway.

I think they sprout deep in the moist batch of harvested vermicompost, die and then get eaten :-) Digging through it once in a while I will see sprouts.

I retract my earlier statement. I have tons of tomato and squash volunteers in my garden this year, no doubt from the vermicompost.

So far the tomatos are doing extremely well. Better than the ones I started myself and better than the plants I purchased. Hmmm, there might be something to this volunteer growing, ya think?

You need a hot compost pile (or bin) to kill seeds, if your worm bin gets that hot your worms will die. Expect seeds in the garden if you vermicompost them, same with normal piles unless hot enough.

If you microwave the seeds, will they still sprout later?
