As to question two. There are chemicals in citrus that worms don't like so a citrus peal put in your worm bin will not get broken down very quickly and too much citrus might make the worms want to move elsewhere and try to escape. Pineapple is a bromeliade I think and not a citrus. However, I don't know if it contains anything that the worms won't like. You could always try putting a small bit into your worm bin and keep an eye on it to see how quickly the worms get to it. My guess is they might like it.
