It's important to note that the worms are feeding on organisms that are eating the OM in the bin. So I would guess that they can go without a "feeding" for a long period every once in a while since they are eating the organisms that are eating the foodstocks and bedding. I believe that they will reingest their own castings several times to get nutrients.

Some people will stop putting foodstock a bin to do this to get what they claim is a better processed worm castings. I haven't done it, but I've only harvested once. I think it stresses the worms and could affect the bin evironment variables, but those worms are pretty tough.

The worms will be just fine. Personally, I stopped pocket feeding quite a while ago. It resulted in too much mess and stinky castings. Now I just fill the bin completely with foodstock and leave it until the vermicompost is the consistancy I like. That usually takes a couple months at least. The worms aren't any worse for it. Harvesting does take a long time though.
