Have you tried Grass-B-Gon? It's made for gardens, and says on the label the plants it's safe for. Has a rather long list. You can get it at any big box store.

Grass growing up through plants with a definite single stem or crown, like juniper, lavender etc - often you can lift the edges of the plant and get to the grass at dirt level to pull it, getting the roots and not breaking it off.

I renovated a bed for a neighbor years ago though and I lifted the plants in Fall, basically barerooted them to get the grass roots out from under, making sure to get the wild violets at the same time. Then I spaded through and removed weed and grass roots from the bed itself before reinstalling perennials/shrubs, applied mulch to cover any weed seeds...a lot of work but a lasting effort and easy to keep up after that.

But then I would have to wait until next fall to do this when it starts getting cold again and the plants are dormant?

I need to do it now before the plants die.
