They will be high maintenance but I am sure you figured that out already as for scratching the sealant won't really help much there. Is there not something else that would work with less worry. I hope you live in a warm place as this will have a very cold feel both temperature wise and just a feel.. We actually put in laminate that looks exactly like cararra marble in our bedroom I love it and 2 huge dogs have not put a scratch in 6 yrs.
