when to pick tomatoes

last year i read a post here on garden web about a study on the acidity of tomatoes. it was a report from the u of Wisconsin i think.

it said that the peek of acidity occurred at the peek of ripeness.

my conclusion was that for canning tomatoes should be picked at the peek of ripeness.

i can see if they are picked for the farmers market or for shipping they should be picked sooner.

will a tomato that is let to ripen in the kitchen reach the same acidity as vine ripened ones?

the produce man at the local market told me that it is illegal to ship ripe tomatoes across state lines and that they put the green tomatoes in a room and gas them with Ethelin ( i don't know how to spell that) to turn them red. i understand it is the same gas that fruit make to ripen itself.

well what ever they do i don't like store bought tomatoes.
