I do double rows in 3ft, so yes, you can get away with 2ft wide single rows, 1 ft deep or so. Of course, you wouldn't be maximizing your space and lumber costs would be inefficient with just 1 row. If you have the room, consider 3ft singles or 4ft doubles.

Depends too on how you plan to support them - CRW cages take more room. Stakes or cattle panels take up less. In a 3-4' wide raised bed with a cattle panel staked down the center of it you can cram in lots of plants on both sides of it and still be able to reach all of then from the outside of the bed for picking.

Disease is a factor for you so if you never prune like me you'll want good air circulation. I plant at least 3.5 feet apart in all directions but 4 feet apart is about my average. IMO 5 feet apart is ideal but I always start too many plants...:)

Lasagna composting has worked great for me. No till, easy as manure...:)

I do plan on doing the lasagne method. Any reccomendations as to what recipe to use?

I didn't use the lasagne method, but what I found that worked great for my raised beds was from a square foot gardening book. I filled each bed with a mix of 1/3 vermiculite, 1/3 peat moss, and 1/3 of compost/manure/bags of garden soil (I tried to have a diverse blend of ingredients for the last 1/3 of the mix). I've had problems with speck, wilt, and blight in my regular soil, but the plants (some of which are tomatoes) look emaculate growing in this mix. I think it is the wonderful soil that they have which is keeping them from getting stressed and allows them to resist diseases. It drains beautifully as well.

I started off using about 10 page thick newspaper. Then I filled with a combo of compost, mushroom compost, non treated grass clippings and shredded leaves. An inch or two of mushroom compost on top. In spring planted into that and then I used an organic mulch pretty thick like 3 to 4 inches. Lately I've been using straw as my mulch. In fall lasagna all over again.
