Watering Question

I read on another thread a comment that over-watering can lead to bland tomatoes (I'm paraphrasing). Is this what others have found?

On a related note, is there a relationship between watering levels and rate of ripening? My plants are growing like crazy (Brandywines over 7' tall) and there is a lot of fruit growing big. I water generously because I'm in a dry climate, but now I'm getting concerned with the rate of ripening. I'm only now seeing some blushing on the bigger fruit, and it typically starts getting cold around here in another month to 45 days.

Can reducing watering (or anything else, for that matter) have an impact on rate of ripening? For example, I've read that one can "top" plant and/or prune aggressively to concentrate the plant's energy on fruit production, but I'd rather trust in the experience on this forum than on hearsay.

Thanks for any thoughts!
