The pictures I've seen of Absolute Cream (which is beautiful BTW!) seems to have more brown tones then black, so the Cafe Brown would go better IMO. But every granite slab is different so that would depend on the particular slabs you pick out. (I'm not big on black sinks so that may be swaying my opinion too.)

I'd look at all your elements together: cabinet finish, granite, back splash (if using one), flooring, cabinet hardware and then sink and faucet. Do more of your tones tend toward brown / warm colors or toward black or cool tones?

How about ordering the sink in both colors and seeing what it looks like IRL next to your other elements? Then return the one you don't pick.
