Induction Ceremony!!

The new 30" Bosch is in and working like a dream! There's no going back now. I have NEVER had such quick response! It's also very precise in heat levels. I made an Emeril recipe of Andouille-Crusted Redfish with Creole Meuniere Sauce. The sauce can be tricky and break if it gets to hot. Not a chance with this cooktop. It was maintained perfectly and not a hint of breaking. Next time I will try the newspaper trick so clean up will be easier. I do love not having knobs too. Thanks to all here in the forum for the induction encouragement!!!

I just had my Wolf unframed 36" induction installed TODAY!! I am so excited!! I replaced my gas cooktop and have been so impressed with the quick response and control of the induction. I am also looking forward to being able to actually simmer/melt which was very hard to do with gas (at least my old one). Clean up will be a breeze! YIPEEEE!! What's the newspaper trick? Do tell...

    Dear Joy
Isn't it wonderful to go to such an energy efficient way of cooking? I have found that it can be picky about pot placement but that's only an adjustment. I love the pots with glass lids too since you can change temps so quickly. I turned off the beeping with each temp change also. That was annoying. From a former post, and I apologize for forgetting their name, told about placing a sheet of newspaper under the pot/pan to pick up grease spatters. I should have done this with the fish recipe yesterday (clean up was still easy). He claimed that the paper can catch fire. I found today that I had it on powerboost for several minutes and there was no problem. Nice trick to remember. Happy Induction cooking! It's a whole new world and cooking is even more fun!!

My Wolf oven was delivered this week but the cabnets aren't finished so it may be a couple weeks. But I can't wait.

Please share any "secrets" that you discover.

    have fun

I needed a steamer for veggies so I went to Bed, Bath, & Beyond today(along with a magnet). It was easy to find one that was only 39.99. I also want to check out TJMaxx for small pots. The Le Creuset are the best so far. I am so impressed with the speed in reheating things also. There is NO delay at all like the electric I had. It's so much more efficient with time and energy. I am still on the learning curve and loving it. Wolf induction is wonderful as well and I came real close to getting one. I am left-handed & their controls are on the right for the 30". I chose Bosch over Thermador and saved a couple of hundred dollars. Enjoy!!

I need all new pans and have been looking at Marshalls and TJMaxx but the selection hasn't been very good. I'm heading into town tomorrow and the magnetic is already in my purse.

I got the Wolf steamer and am really excited to try that too.

Keep those magnets away from credit cards!

check out the inductionsite.com for lots of good info on induction.
All-Clad is recommended but you can find cheaper at Tuesday Morning with brands like Berndes (excellent) & Chantel.
Good point, laat2. You wouldn't want to spoil your shopping trip.
datura-07, you got a steamer oven? I have been hearing alot about them. Professionals have had them for years. Do you really think you will use it enough to justify the cost? I am going to see a demo sometime on them. I'd love to hear about your experience with it also.
    thanks

    Carol,
It's not a steam oven but a Wolf module that is in the counter. I got three modules: a 15" induction (2 burners), a multifunction gas (one huge burner with a wok grate) and the steamer. I first saw it two years ago and wanted it BUT I thought it was way to much money. When we decided to enlarge our island this fall, I decided to get a steam oven. My son used one at work while he was in college and was the one that pushed me towards one. When I opened the Miele at a stowroom, (no water supply) the door was all scratched from where you slid the water holder in and out. It looked terrible. I know I would have been more careful with mine. The dealer also told me that the steam ovens were having lots of problems and wouldn't recommend them. That's when I decided to scratch that idea. And it only took me five months to decide what to order. I went to a demo at the Wolf factory with their corporate chef and he used the steamer along with all their products but I talked to him a long time that evening and I finally made my decision several days later after talking to him more by phone.
The steamer has a drain but not a water supply - that's the main reason I'm adding a sink to the island.
I think I'll use it almost nightly - I like to steam my veges and I fix many fresh ones. I can use it for rice, fish, chicken, etc. and I can also use it as a slow cooker. You can use it without the steamer tray or the regular tray and have a big pot of soup or chili. I thought it would be great to serve something in it for a party. And I have gone thru two electric steamers in ten years.
I'm also getting their wall oven and am excited that it has a proof setting and I'm getting the bakestone. Joel made the best pizza and home made crackers on it. I'm really psyched!! Now if I can only select my sinks and faucets so they come before the granite guys need them.

    Here's the steamer:

Oh, thank you for the info on the steamer module. Very nice! If I had the counter space that would be a must. I have a large veggie garden and do steam the majority of them. Gaggenau, I believe, started the steam oven from what I have heard. Very nice concept but so expensive. The Wolf wall oven is absolutely gorgeous! I love the blue interior alone. Are you getting a single wall oven or a double? I have yet to decide on that. I make bread every week & only need a double during the holidays. Carol

I'm only getting the single. I have two wall microwave ovens. I use both of them at every meal and couldn't do without one.

I can almost see having a second microwave versus a second oven. Do you have them stacked together?
    Happy cooking to you!

Congratulations on your new induction cooktop! My Miele was installed 2 days ago, and I'm in love with it already.

    Enjoy!

    yes I have them stacked.

I don't think I'd really need two ovens very often. Unless you are doing a turkey, you could put things on two racks.

I need to check the induction site for cookware. We stopped at a store today and they had a beautiful red LaCreuset cast iron wok. It was so heavy and my dh liked it and said I should get it BUT $225. I'm still using the set of pots & pans I got in college (friend's boyfriend sold them door to door but was getting out of it and had a couple sets left - got it for his cost of $100). So, I need to do some checking.

What type of pans are you using? Others have said there unit makes a clicking noise, does yours?

erikanh- Thank you & same to you for your new Miele. How did you decide on it, just out of curiosity? It's interesting to see what process you go through deciding on these things.

datura-07- The microwaves make more sense to me than a second oven right now. My second oven is used for storage. I could have a large drawer instead.
Cookware is really no problem. Tuesday Morning (if you have one in your area) has Le Creuset 1/2 price. They also have Chantel & Berndes (excellent). I am loving the glass lids since adjustments in temp can be in an instant. Ebay is another good source. TJMaax is another. Take your magnet (away from your credit cards) with you. The stronger the magnetic attraction to the bottom of the pot then the better it will work. I found a brand called Denmark Tools for cooks at Bed Bath & Beyond. It's a multifunction 8QT pasta, steamer, pot with lid. I am returning it since it's too large for my normal steaming for 2 people. It's well contructed & was only $40.00. Currently I have several Le Creuset dutch ovens & frying pan (I just love them) that I got from Tuesday Morning. (Don't pay full price!). I have 2 Berndes that are very good and come in 2nd to Le Creuset. Third would be the Chantel. They are not constructed as well but do nicely.

Noises- interesting you mentioned that since I am discovering new noises as I cook. There is a "crackling" sound from the pots (Chantel) I use (not the heavier constructed pans). It's the layers heating up. There is a fan noise when cooking at higher heat levels that is very low pitched & turns off with lower temps. There are other noises that the manual lists that I have not encountered.

One thing that I already had a tech come out and check after calling Bosch for warranty approval. I wanted to turn off the display beep that occurs with each temp adjustment. How annoying. I don't need any more noises. I followed the instructions 5-6 times and it would lock the cooktop and not turn it off. The tech came in and did it after 2 trys and turned it off. I am enjoying just touching the controls lightly and not having to deal with knobs. I have the manual very close at hand since I am still on the learning curve.
    Have fun!!

I have looked at TJMaxx and Marshalls the last two months - nothing. Not sure if there is a Tuesday Morning - will check that out - I've never been to one.
Thanks for the tip - I almost bid on a wok last night -sold for $154.

Our Bed Bath and Beyond closed last year but I just discovered it was the west side store and there is one on the east side. I need to check them out also. The last four times I've gone to town (we live out in the country)my dh says I'll go along and we can go somewhere for lunch. I hate that!!!! because he only lasts so long and is ready to go home. I need to shop by MYSELF!!!! I do a lot of volunteer work and right now I don't have enough time to do things for myself.

yes by all means you need to find a tactful way to shop by yourself!!! Good luck

mississippirose-do be a little wary of using the newspaper and for how long. I love to do the 'boiling water trick with a piece of paper towel' underneath for guests. My husband tried using a sheet of paper towel while making popcorn because I didn't want him to scuff the surface. Once when he was doing it the paper started to smell and turn yellowish. There was no doubt in my mind it would have caught fire or at least started to smoke. I also noticed that with the paper underneath the pot it reduced the efficiency of the boil, so I don't use paper underneath any of my pots or pans. The cooktop is so easy to keep clean anyways-isn't it great!

Hey Moose, I had wondered if the paper between the pan and cooktop would make any difference. Thanks for being observant enough to tell that it did effect it. I appreciate your celebrating the marvels of induction with the rest of us. Enjoy!

For those of you looking for induction pots and pans--Tuesday Morning has a website you can order from.

joywall, that's very good news and I'll check it out. I just came back from TJMaax. It was a waste of time.
