Griddle for Wolf Range

We purchased an AG 36" Wolf range with 4 burners and a griddle. I love the range, and but am regretting choosing the griddle option. I was originally looking at the grill, but the salesman talked me out of it. My issue is that my son has a ton of food allergies, and I don't feel comfortable with not being able to clean the griddle properly with soap and water because of the worry that food remnants would remain on the griddle that could cause an allergic reaction for him. As a result, I haven't used the griddle at all so far. Am I being overly paranoid here? For others who have a built-in griddle, what do you use to clean it? I also wash my cast iron pans with soap and water for the same reason, even though I know that I'm not supposed to. We have an outdoor grill that we use, but I am not concerned about that because the high heat basically obliterates anything left on the grill. Any input or feedback would be very much appreciated.
