Hello,
The grease flows into a hole that drains into the flat tray. In my opinion this is one of very few design flaws on the Culinarian. I much prefer the small container insert used on Viking, Wolf and a few others.

Shame. That seems like quite a mess, and quite a design oversight. Maybe they could make a little removable tray to fit within the tray.
