Thermador Induction

Well, even though our kitchen is still a work in progress, my Thermador induction has been up and running for a couple of months now. I thank everyone for the useful posts on induction and the many passionate induction converts who convinced us to go this route. I absolutely love this cooktop. The responsiveness to changes of temperature is phenomenal. The power boost option is awesome for boiling water and quick heating other things. It has simply been a joy to use. If I had any complaint, it would be the low volume clicking noise that kicks in when you are cooking at low temperatures. This is only bothersome when you are simmering something for a while. But hey, this baby simmers like no other. Any questions, let me know.

Do you have any issues using large frypans or stockpots?

None whatsoever. It is amazing how quickly you can bring a pasta pot to a rolling boil. Large stir fries cook evenly.

Have you make pancakes? That's one thing that has come up on this forum before but nobody was able to answer. Nobody talks about pancakes (and other griddle specialties) on an induction cooktop.

Any experience with them yet? That's one thing that could conceivably force me to get a hybrid unit. On the other hand, if the 11" zone worked well for pancakes, I think I'd be ok going ahead with all-induction.

    jaynesb,

I've been cooking pancakes on my $20 Presto electric griddle ever since Alton Brown recommended using an electric griddle instead of cooking them stovetop on his episode for perfect pancakes. The electric griddles produce heat at exactly the same temp each time and heat the entire cooking surface evenly (no hot spots) cooking pancakes to a golden perfection. The non-stick surface wipes clean with a paper towel. It works great for us.

I'd love to know any kind of feedback you have about the thermado induction....I have my eyes on it! I've had gas for years and feel nervous about buying something that is so new to Thermador. Please keep me posted....I'm even curious about the pancakes!

Don't be nervous. This cooktop is amazing. Pancakes come out perfectly. Of course we use good cookware (Demeyere) that heats extremely even. This cooktop has precise control over temperature. I'll admit, we had a slight learning curve in the very beginning. I think we burned some bacon once but when we got the feel for it, presto. Once you know what setting is best for a certain food, that never changes. This cooktop is 100 percent consistent; even between hobs. Something else that never ceases to amaze me - if you have something boiling on one hob and need to move it to another, as soon as you turn on the other hob it is running like the first one - no waiting AT ALL. When you drop a setting the response is instantaneous. I'm sure this must be the same with ALL induction cooktops.

If you get this you won't be disappointed. Cooking anything that has some spill-over is a breeze; just move the pot over and wipe the hob with a paper towel and move the pot back onto the hob. Never again will a spill crust over and become a nightmare cleaning job.

Is it possible to place a single wall oven under the thermador induction cooktop? I vaguely recall something saying that is was not recommended.

I'm so glad to hear that you are loving it! Did you look at any other models before choosing the thermador?

I'm so glad you love your induction. Several months ago when we looked at appliances for the new build, the manager showed us the Viking induction. DH really liked it but I didn't give it a second thought mostly for the price and look. I had my heart set on the Thermador 36" electric cooktop.

Now, after reading all these threads about the induction I'm rethinking this. Some of the most important things that turned me around - no more burning food from spills and overflows and no burns to little finger touching things on stove. May seem minor to some but a big deal to me.

After visiting several web sites, I like the look of the Thermador the best. Now if I can just find one in a showroom locally.

Any other thoughts or advice would be appreciated (to help sway me this way)!

My DH saw the molteni at a chef's night out with his firm. The Molteni has both gas and induction components. He thought the indution cooktop was just a regular electric top and mockingly said to the chef that they probably never used the smooth cook surface. The professional chef's replied that is was an induction stove and the "lamberghini" (sp) of all their cooking equipement and only their best cooks were allowed to use it. The chef proceeded to boil a pan of water in less than a minute. I've never seen my DH impressed by any kitchen appliance until he saw induction.

Sorry for not getting back sooner, I've been away.

We have not cooked pancakes yet; like the OP, we use an electric griddle for that.

We did look at the Viking and the Diva before getting the Thermador. I did not like the look or the knobs on the Viking. The Diva was nice looking, but I did not like the price! We ultimately got the 36 in all induction for about $2K, way less than the Viking and Diva. I have to say that the price ultimately drove the decision. That said, I am totally happy with the Thermador.

I have a round Lodge griddle pan that I cook pancakes on. They turn out the same as when I used the same pan on my Bosch electric. Actually, the induction is better, because the Bosch didn't keep the heat consistent over a period of time (making lots of pancakes), I would need to turn the heat up and down. The induction stove keeps the heat very consistent.

Tortoni, where did you buy your Thermador?

    Thanks!

I can't believe you got a 36" all induction Thermador cooktop for

are you all using the 36" thermador induction? i am considering the 30" model because i'm not sure i want to give up the extra counter space but could go either size. any thoughts? :) thanks

The 30" induction cooktop was not available until September, so they are either talking about the hybrid model or the 36" all induction.
I installed a 30" induction Thermador in September.
Four burners was enough for us.
It is terrific to cook on, and looks great also.
It is also nice to have an excuse to replace old marginal cookware also.
We are cooking with Demeyere now. What a treat.

John, would you mind sharing your source for Demeyere? I've tried to find their ControlInduc here in the US and have struck out so far. Thanks, Pam

    Check out the link.

We stayed with Apollo because we love the set that came with the cooktop. Demeyere has 6 other lines as well. I believe Apollo is the least expensive.

    It's worth the money.

Here is a link that might be useful: Good for Demeyere

    Thanks, that's the ticket!

Pancakes turn out just fine on my induction cooktop (GE Profile). I picked up a 12" nonstick skillet at Sears (looks just like the KitchenAid induction skillet, but didn't have the helper handle and was quite a bit cheaper), and I use that on the 11" burner. You can do two small ones at once or one big one. I haven't burned any yet.

I test drove Thermador induction cooktop yesterday and really liked it, but we could not get the timer to work properly. It would accept 1 digit, but not two (as in 10 min.). Have you had any problems with your timer in the past year. I am so relieved to finally be ready to commit to Thermador after months of researching that I probably won't let the timer issue prevent me from purchasing, but I am curious to hear what you have to say. Thanks!

You've probably gotten an answer to the timer problem already but I've been using a Thermador induction cooktop for a year and a half now and I love it. The timer is set by running your finger up the numbers until you get to the one you want. If it's more than 10 minutes quickly put your finger back to 1 and continue moving your finger to the right until the correct number is set.

On the 30" induction, I have heard that the large hob (burner) will only accept large pots, i.e. the hob does not have pan size recognition as the large hob on the 36" range top. Have you had any problems with undersized pots on the other hobs also. I have a small (2") sauce pan. will it work and if so on which hobs
