adding induction to existing kitchen

Hi all,

Our long term plan is to do a full kitchen remodel, but that's still in the brainstorming/dreaming stage, and will likely be a good number of years out. I'd eventually like more capacity than a 30" range provides, but I was able to convince myself and my wife that if I bought a high end 30" all gas range now, it'd keep me happy for a while and that I'd just add to that down the road. As I'm starting to play around with induction cooking lately, and enjoying it, I figured I could add a drop in induction unit and maybe an electric oven at that later date. I'm a big fan of modularity and using the right tool for the right job, so this seemed like an attractive approach to me.

So has anyone taken an approach like this? If so, how do you like it? Do the aesthetics of your kitchen suffer? I'd be very interested in seeing pics.

Of particular interest to me is the addition of induction hobs. I have a single hob portable unit right now and I enjoy cooking on it, but lacking ventilation for it, I mainly use it outside on the deck. Consequently, when we do the full remodel I'd like to put an oversized hood over the 30" range to handle either a drop in or portable induction unit off to the side. I'm curious if anyone has a similar setup and how it functions for them and how it looks. I suppose going portable on the induction means I have more work area when I need it.

Pretty much just musings at this point...
