I know what you are talking about, but I don't have a pattern for you. I bet someone finds one online for you. Fun yarns don't tend to be very warm, so if you are looking for warmth, combine the fun yarn with another yarn and knit the two strands together.

I think what you are looking for would come under several different names. Try looking for "chullo hat" or "aviator hat", or "ear flap hat". You can just make the flaps longer without decreasing to points or curves.
