I have induction too. Our cooktop is a De Dietrich 309x purchased from Salon Blue Ridge in North Carolina (we're in Illinois and our experience with them, through some problems and getting a replacement hob, was fantastic).

I have melted chocolate in a pot directly on the cooktop and often make high heat stir fries. It handles both with ease. I love the individual timers on each hob. I can set a pot of rice to cook and turn itself off when done.

Cleanup is a breeze as well. Because the cooktop doesn't ever get any hotter than the residual heat it acquires from the pot. nothing "cooks" onto the surface and it's as simple as wiping it down. I have also cooked with sheets of newspaper under my frying pan to catch the grease spatters when sauting chicken, etc. Simply fold up the newspaper and recycle it and the cooktop is clean.
