This is the general direction I'd head in. (Disclaimer: this is a hobby for me, not a profession)

That's a big table; I do think you'll want more than just the chandelier there, though the other lights probably don't need to be as bright as the cans in the kitchen area. I also think the dining area will be more pleasant if you can put some light on the walls. You could use eyeballs or gimbals to bounce some soft, indirect light off of them. If you hang any artwork in there, then that that will give you something to point the lights at.

You might also consider lighting a couple of outdoor lights on some interesting feature outside the windows, to reduce the black window/fishbowl feeling of not being able to see outside at night.

Pendants sound like a fine idea for the sink/bar area. Elsewhere I'm thinking in terms of 75w PAR halogen floods, which dictate 5" or 6" cans.
