kitchen lighting

We're about to embark on our kitchen remodel. The kitchen is long and narrow: 13 ft wide X 23 ft. long. The first part of the kitchen is 2.5 ft long by 13 ft wide and merely serves as a passageway from the entry foyer through to the back hallway. The next 11.5 ft X 13 ft. space is the actual cooking part of the kitchen. It will have cabinets along both wall with a peninsula coming out before you reach the eating section (which is the remaining 9 ft X 13 ft). At the end of the 13 ft. wall is a 9 ft. bay window and 2 skylights. There will also be an island starting about 3 ft into the kitchen. There will be upper cabinets above all counters except the island and peninsula. The peninsula will be my main prep space. I am at a complete loss as to how to light this kitchen (especially this prep space). I would like to keep a 2 bulb hanging light (which is highly sentimental) over the kitchen table (although it is not the brightest and could use some help). Other than that, I am a clean slate, light wise and have no idea how to start. Oh, and I'm planning on using dark granite for countertops.

thanks for any advice you can provide!
