Food Prep Sink Design

I'm designing a brand new kitchen and am totally new to this. My obsession of the day is the food prep sink. I've read several threads on this and have learned a bit but here are my remaining questions:

(Imagine a rectangular island, long end with 4 seats on one side and the other side creating a galley of fridge, counter space, stove, counter space. Then, across from the short end of island there are windows to backyard with counter holding main sink and dishwasher. I would do food prep with back to stove/fridge and facing the breakfast area (main sink/windows to my left). Also, I need a prep sink because I don't think my triangle is efficient without one-- primary sink too far from fridge)

1. Which sink should have the disposal? Seems extravagant to have two- also more things to break. I can't imagine not having it in cleanup/main sink facing backyard. But what does that mean when I prepare food at island sink?

2. Where do I locate pull out trash can? Thought at first I'd locate it near main cleanup sink. But, now that I think of it, perhaps if that sink has a disposal, I should put the trash in the island near the prep sink? Or, do I need to take up more cabinet space to have two trash cans? Or, perhaps I should just have a stand alone trash can that I can move around as needed?

3. Filtered and hot water spout - which sink makes sense to have this on?

4. Location of sink on island - If it is at end of island, away from second sink, it would be directly opposite the fridge. Seems like I'd want some landing space opposite the fridge (even tho I do have a counter space to right of fridge). However, I've read not to put prep sink in center of island because it breaks up work space. Could I leave maybe 6-12 inches of space from edge of island, enough for a small landing spot across from fridge? Then the sink would not be centered, nor would it be at the very end. Would that be weird?

I'm obsessing and need someone who has more experience with kitchens and design to weigh in. Please!!

Thanks!

What type of refrigerator will you be getting? French door (FD)? Side-by-side (SxS)? Single door? The answer will help define your landing zone for your refrigerator. If it's a FD or SxS, then ideal landing zone is in front of the refrigerator. If a single door, than either the island or the counter next to it on the handle side will work.

    To your questions...

    (1) Garbage Disposal (GD)...If you only have one disposal, the prep sink is the better location. I speak from experience here. We made the mistake of (a) thinking it would "save money" to not put one at both sinks and (b) putting the sole disposal on the cleanup sink. In reality, a second GD is not that much of an additional expense. Additionally, it's need far more often on the prep sink than the cleanup sink. So, based on my experience...put it on the prep sink. Or, better yet, get two. It's not "extravagant", it's common sense to have the two.

    (2) Pullout Trash...Either place it b/w the Prep Zone and Cleanup Zone or place it in the Prep Zone. This is yet another mistake we made...and it's the biggest regret I have in our kitchen. We placed the trash pullout next to the cleanup sink. I have since realized that far more trash & recyclables are generated during prepping and cooking than cleaning up. Not only by quantity, but also length of time needed. I have to cross a 6-foot aisle to get from the Prep and Cooking Zones to get to the trash pullout...often dripping all the way. Again based on my experience, place your trash pullout in the Prep Zone!

    (3) Filtered and hot water spout...I don't have either, so I cannot recommend based on experience. How do you use it? Just for drinking water? Or, do you fill your pots and pans from them as well? If the latter, then I would say the prep sink, although it might mean too much non-Cook traffic in the middle of the Prep and/or Cooking Zones. If the former (drinking only), then probably the cleanup sink to keep people out of the Prep & Cooking Zones.

    (4) Location of sink on island...For this one, I'd have to see the layout. I'm better with a "visual" than a verbal description. Normally, it's best close to one end so it doesn't interrupt the workspace, but sometimes it works better in the middle. I would want it where I could use it easily for prepping and cooking and not where it might compete for floor space with the cleanup sink. I think 6" to 12" from the end of the island would be just fine...depending on the width of the island, you might even do 15" to 18". It not only would give you landing space in front of the refrigerator, but it would also give you some workspace on both sides of the prep sink...two people could prep there if needed!

All of this is very general advice. To get more detailed advice and tailored specifically to your situation, it would be much better if we could "see" the layout. So, could you draw up your layout and post it here? Read the "Read Me" thread...

Here's something I posted in another thread:

    1. Take the "Sweeby Test" (see the "Read Me" thread)

Read the "Layout Help" section several times (at least 3 or 4 times!)
Think about how your current kitchen functions and write down your likes/dislikes
Think about how you and your family use your kitchen and surrounding areas in your home
Read the "Layout Help" section again and this time write down your answers to all the questions
Read the "Planning for Storage" section once or twice
Come up with a first stab at a layout if you can.

    • If you can't come up w/a layout, then draw up the "blank" space (as described in the "Layout Help" section) and post it here

If you can, then post your layout here for a critique.
In both cases, follow the directions in the "Layout Help" section for drawing up your layout or space and include the answers to the questions from #5

    1. I'm not disagreeing with Buehl, but I have only one disposal and I put it in my clean-up sink. I think most people have zero or two. I generally save my veg scraps for the compost bin, and it's not too far to the other sink to brush seeds off my hands or whatever. Whereas, I'm more likely to want to put table scraps and meat trimmings down the disposal, and those are really clean-up sink tasks. But that's just me. I think more people do it the other way, and most have two. I made sure that there was sufficient room under the prep sink that a disposer can be installed later if it's wanted.

    2. I keep bags for carrying out the compostables in the island. I have a trash pullout by the clean-up sink. There was a space left, and it's "normal", so I have it. I use it for recycling, one bin for mixed, one for deposit returns. I have another recycling bin under the table. The garbage is in a covered pail that lives under the clean-up sink most of the time. I can't stand the idea of yucky garbage inside my cupboards. When more than a few used paper napkins or tissue go into the pail, the pail comes out. When I'm doing prep with a lot of garbage, the pail comes out with the lid off and scoots over to the prep zone. This works best for me. Most people have it by the clean-up sink with one bin recycling and one bin garbage.

    3. Filtered and hot water spout - which sink makes sense to have this on? That's a hard one. Where do you have the room in the cupboard for the works? The tank isn't small. You might only have room under the bigger sink. If that's not an issue, where are the glasses/mugs? Where are the other snack items? If it's instant hot, how far is it from the range? Where would be most convenient?

    4. Could I leave maybe 6-12 inches of space from edge of island, enough for a small landing spot across from fridge? Then the sink would not be centered, nor would it be at the very end. Would that be weird? This is the correct way to do it, if possible. 12-20" from the end. The landing zone is not only important for the fridge, but for two sided use of the sink. My one island is small and my sink is odd, so it's all the way to the edge, but I still have about 6" on the far side, when looking at it from the prep area (only ovens across). I use that little bit all the time. It's very useful. 12" would be a lot better if one had it to give away.
