Kitchen lighting dilemma

The only good thing about my kitchen is that it is bright and light. But I am remodeling and removing the undercabinets lights (which I think provided most of the good light) and now I am worried about how to light the new kitchen.

My ceiling is sloped. I have one pot light over the sink and a ceiling fan over the old island addition to the undercabinet lights. However I am moving the sink to a new island (not in the same area as the previous island) and eliminating the upper cabinets.

I don't think I can install more pot lights but I hate the glare of track lighting.

Any suggestions?
