How should I support 2" pvc pipe (span 12') running between ceiling joists?

It requires a support within 1' of a change in direction and one hanger for each 4' linear feet of run.

You could use preformed PVC J hooks, formed PVC pipe hangers or PVC perf tape.

Code prohibits using any metal hangers for supporting plastic pipe.

The State of NC has the 2003 IPC with 2006 NC amendments. It does not limit the hanger materials for PVC nor CPVC. The information posted by lazypup should result in an installation that complies with every code, but not every code is necessarily that restrictive.
