Forgive my ignorance, what is a "canopy" hood? I have an all stainless island hood but don't know if it would be considered a canopy.

Unfortunately, that's one of the drawbacks of a range/cooktop in an island or on a peninsula...the overwhelming presence of a hood (in addition to the safety issues, of course).

If you mean a glass hood when you say "canopy", then you're right, you'll be cleaning that thing every day....not just grease, but also dust.

The all-SS hoods will have more of a presence than a mix of glass & SS.
