I have been scouring the internet looking for pictures of sunstone pearl finishes (I want a darker blue).
I linked to a site below, which has at least one in white and several in aqua.
florida_gal and JJs_austin both have sunstone aqua pearl and their pictures are in the gallery.

Our pool is Crystalstone pebble in turquoise pearl. Anyone looking for a clean blue should not choose this color. It's very much a turquoise blue color and on cloudy days has a gray cast to the water. We love the color, but it's defintely not a clean blue.

I have been struggling with the very issue you have but was told by my pool builder that they have had some complaints about streaking from the colored grout used for the colored finishes for those products (all made by CLI industries in Orlando, FL). What I wanted was a pebble smooth finish that had the small rocks colored, not the grout. I called CLI and they can mix in any colored stone at the job site to your sunstone pearl finish. They also have a new product called Sunstone Pearl Cove Blue. It has small blue rocks that give it a bluer hue than the white pearl. They sent me a sample in 3 days! It looks great. It is not yet on their web site. (My plaster goes in tomorrow! Good luck

I am now more confused than ever about these finishes.
I just spoke with a very helpful young woman at CLI and she has basically opened up new options.
Apparently, cove blue pearl was a "custom color" which was requested by several customers, so they are bringing it out as a standard color. As mentioned above, the combinations of stones and plasters can be changed. You can also mix plaster/stone combinations as missy_23 did with blue pearl and black pearl.
To add to the choices, another new product line called crystalstones smooth is apparently the same pebble size of sunstone pearl and could have been placed in that line, but has different colors. Unfortunately, none of these is available to see on the web and they have to send samples.
When I get mine, I will try to post pictures, but even that doesn't really give us a great idea what the final pool color will be.

By the way, would love to see cove blue when you get a chance.

brentr- I was looking at your pool build pictures and see that your shallow end is 3 1/2 feet deep with 3 stairs into water. I have the same configuration (pre plaster) and am a litte concerned that the risers are too high. Have you had any trouble with people getting in and out because stairs are so tall? I'm not even sure this could be addressed at this point but I'm curious if this is even an issue to be concerned about. Thanks!

almost there, we have had no problems with people getting in and out of our pool. The wife had the same concerns and wanted 4 stairs, however the PB talked her out of it because our pool is so small. We are very happy we took his opinion. I just measure them. The first stair to the top of the coping is 10 inches, the second stair is 11.5 inches, the third stair is 12 inches and down to the floor is about 7 inches. Remember it will measure differently when they put plaster in the pool.
