Range hood with low ceiling

We are remodeling an old farmhouse with 7'4" kitchen ceiling. We have a 36" gas cooktop on a penninsula and I'm having the devil of a time finding a range hood that will work. Nearly all are designed for 8' min. ceiling height. Someone suggested using a wall-mount or under-cabinet hood with a box built above it to attach to the ceiling and contain the ductwork and attachment points. Does anyone have experience with this configuration, if so do you have any photos?

Any recommendations for an island hood that will work at that height? The only one I've found is the Kobe IS123 w/ 16" stack, and even that will be less than 30" above the cooktop. I'm afraid that will be so low that heads will bump during cooking and passage thru the kitchen. Thanks for any suggestions!
