Window dressing question(s)

I have a two-part question. I'm having a cornice made for the bay window in my kitchen's eating area. For 10 years, I've had white 2" wood blinds on the windows and they will stay and I'm adding curtain panels that will always be pulled to the sides of the windows. I'm adding these because I think some softness is needed. I'm conflicted about what color the cornice should be. Do you think it should be painted white to match the blinds and trim or stained to match the cabinets. Now, question 2: The only other window in the room is over the sink and it has a blind. Should I top that blind with a valance that matches the panels on the bay; top it with a cornice; or leave it alone? Looking forward to your opinions and ideas. Thanks!
