LOOKING for: General Tso's Chicken

My dad always orders this when we go to a Chinese restaurant. Does anyone have a T & T recipe for it?

    I was taking cooking lessons years back, at a Chinese takeout place/gift shop here onLong Island. One of the dishes was General Tso's. I have to find my folder with all of the recipes, and will gladly post. If I recall correctly, the chicken/batter are fried at least two times...

    Ok, this forced me to add it to MasterCook, which is a good thing. This comes from a take-out place here on Long Island that use to give cooking lessons. Everyting they made was great.

    Just remember, prepping everything ahead of time, makes this much easier.

    General Tsoa's Chicken

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 1/2 pounds chicken meat -- cut into bite-sized pieces
    1 bunch broccoli florets -- cut into bite-sized pieces
    5 Cups Cooking oil -- for deep-frying
    Batter for Chicken
    1 Tablespoon thin soy sauce
    1 large egg
    1 Tablespoon Rice wine
    3 Tablespoons Cornstarch
    2 Tablespoons all-purpose flour
    Sauce (Part 1)
    3 Tablespoons sugar
    1 teaspoon minced garlic
    1 teaspoon minced ginger
    1/8 teaspoon ground Szechuan peppercorns
    1/2 teaspoon minced Mandarin orange peel
    2 Tablespoons rice vinegar
    1 Tablespoon rice wine
    1 tablespoon thin soy sauce
    Tablespoon Mushroom soy sauce
    1 Tablespoon Hoisin sauce
    3 Tablespoons pineapple juice
    3 Tablespoons apple sauce
    3 Tablespoons Water
    Sauce (Part 2)
    1 teaspoon hot sesame oil -- or more to taste
    1 teaspoon rice vinegar -- or Chinkiang vinegar
    Sauce (Part 3)
    2 teaspoons cornstarch -- dissolved in 1 Tablespoon cold water.

    Steam broccoli for 2 - 3 minutes and arrange in a serving platter.

    Measure out all ingredients ahead of time, including a separate prep for
    each of the sauce parts.

    Place chicken in a large bowl. Prepare batter ingredients separately and
    add to chicken.
    Mix well to coat.

    Heat 5 cups of oil in wok or a deep fryer until how (350°).
    Carefully drop in chicken one piece at a time (so they don't clump
    together) and fry until lightly browned. Dont put too much chieck in at
    one time, otherwise the oil will cool too much.

    Remove the chicken.

    Heat oil to 375°-400°. Add the chicken and refry for one minute or until
    golden brown. Remove from oil

    Heat wok over medium heat until hot.
    Add 1 tablespoon cooking oil and Sauce (Part 1). Stir, bring to boil, set
    heat to low and simmer one minute.

    Raise heat to high and add Sauce (Part 2). Bring to a boil and stir in
    cornstarch (Sauce (Part 3) to thicken.

    Add chicken to sauce; mix to coat. Transfer to broccoli platter to serve.

    Here's my favorite, have made this many times.

    Siam Restaurant's General Tso's Chicken

    1/2 cup cornstarch
    1/4 cup water
    11/2teaspoons minced garlic
    11/2 teaspoons minced gingerroot
    3/4 cup sugar
    1/2 cup soy sauce
    1/4 cup cup white vinegar
    1/4 cup sherry
    11/2 cups hot chicken broth
    1 teaspoon MSG(monosodium gluconate), optional
    3 lbs. deboned dark chicken meat, cut into large chunks
    1/4 cup soy sauce
    1 teaspoon white pepper
    1 egg
    About 1 cup cornstarch
    1 cup vegetable oil, plus more for stir-frying
    2 cups diced green onion
    16 small dried hot peppers

    To make sauce, mix 1/2 cup cornstarch and the water together. Add garlic, ginger, sugar, 1/2 cup soy sauce, the vinegar and wine. Add chicken broth and MSG, if desired, and stir until sugar dissolves. Refrigerate until needed.
    In separate bowl, mix chicken, 1/4 cup soy sauce and the white pepper. Stir in the egg. Add about 1 cup cornstarch, until chicken is coated evenly. Add 1 cup oil to separate pieces.
    Divide chicken into small quantities and deep-fry @ 350 until crispy. Drain on paper towel.
    Place a small amount of oil in a wok and heat until wok is hot. Add green onions and peppers and stir-fry briefly.
    Stir sauce and add to wok. Place chicken in sauce and cook until sauce thickens, adding water or cornstarch as needed for the right consistency. Serve with rice. Makes 6 to 8 servings.

    Well, I went to a Chinese buffet, today, had sign saying Gen Tso's chicken, but it was beef. Guess they were out, grrrr.

    Thanks for the recipes. We are having a Chinese "buffet" on Sunday. I will make General Tso's, a basic beef stir fry, and orange chicken. (I bought the orange chicken at Trader Joe's.)
    I will let you know the results.
