This recipe is from the same cookbook as the Potato Nests recipe posted earlier.

2 Tbsp minced onion

2 Tbsp minced green pepper

3 Tbsp fat

1 cup condensed tomato soup

1 teaspoon prepared mustard

1/2 teaspoon salt

1 teaspoon lemon juice

1 (1-pound) can salmon, flaked

3 cups mashed potatoes

1/2 cup breadcrumbs

3 Tbsp melted butter

Brown onion and green pepper in fat. Add soup and seasonings. Simmer for few minutes; add salmon. Shape potatoes into 6 nests on buttered baking sheet and fill with salmon mixture. Top with crumbs mixed with melted butter. Bake in hot oven (400 F) until crumbs are browned, about 15 minutes. Serves 6.
