RECIPE: Nutmeg-Glazed Rutabaga

Here's another from my recent recipe clipping marathon:

Nutmeg-Glazed Rutabaga

3 tbls unsalted butter

2 lbs rutabaga, peeled and cut into 1/2-inch cubes

2 cups chiken stock or canned broth

3 tbls sugar

Freshly grated nutmeg

In a large skillet, melt the butter. Add the rutabaga, stock, sugar and three gratings (a healthy pinch) of nutmeg and bring to a boil over high heat. Reduce the heat, cover, and simmer until tender, about 25 minutes.

Uncover and boil until the liquid reduces to a syrup and coats the rutabega, about 15 minutes. Dust with nutmeg before serving.

My notes: You got to wonder about the recommended times. My rutabaga was tender+ in just 15 minutes. I removed it, cuz I was concerned that another 15 minutes would turn it to mush. Boiled down the liquid until it was syrupy, then added the diced rutabaga back to the pan and stirred to coat. Worked out fine, and tasted great.
